Crushing

By pressing a start of the first processes required for alcoholic fermentation. To facilitate this process, we recommend the use of a crusher to fly, if not better a destemmer or more sophisticated machines.

With crusher to fly the pressing is done by putting the grapes of the bath and rotating the flywheel, the bottom of the machine leaves the crushed grapes. Leaving the stalks in grapes you get a sour wine that can affect the aroma of the wine as you could get a woody flavor.

Destemmer with the flywheel, the pressing is done by putting the grapes in the hot, rotating flywheel separate the grapes from their stalks. With this machine the grape flavor will be much more pleasant.

The must obtained from pressing is poured or pumped directly into the vat. Beware the vat is filled to ¾ the same as in the fermentation volume increases.
